The fantastic flavours of nutritious native grasses were again highlighted when traditional Gomeroi foods were included in pizza bases at a NAIDOC event held at the NDCAS rooms.
Gomeroi woman Kerrie Saunders oversaw the threshing and milling of locally collected Mitchell grass and arm grass seeds into flour to be added to pizza bases.
The results out of the oven were a hit.
The native seeds flour adds a unique flavour, Kerrie explained.
Saltbush, an ‘amazing’ herb, extraordinarily nutritious and flavoursome was used as flour made from roasted seeds and the leaves as seasoning on the pizzas.
The native foods – grass, plant and tree seeds, are nowadays attracting strong interest as commercial products, drawing on traditional Gomeroi knowledge.
